We know of these items mostly because the results were preserved. Unfortunately, just as only a tiny fraction of ancient life was ever fossilized for us to find today, much more has been quietly lost. Which mollusk produced biblical purple dye, amazing ancient beverages, breads, or cheeses for which we only have a few molecules from... all lost. Worse, as modern masters of ancient traditions pass away with no students to carry on their knowledge, we're losing more and more.
