I used to cook omelettes to order at a University dining hall. At the end of each shift, we would crack hundreds of eggs to be used the next day. To do it faster, we would crack two at once, one in each hand. Considering that the two of us prepped about 3 gallons (12 liters) of cracked eggs every day, I got good at the one hand egg crack, even with my left hand.
