Yup. It is tiring. But i use a pan. The same pan, a cook’s pan: a 30+ year old fully clad, stainless steel clad aluminum. I was surprised and pleased when i saw Julia use my first set on her show. That set was great, but the handles tended to wear out, and come off. That set lasted nearly 30 years, this set is already in my will. It does not need plastic or ceramic to make it non stick, and it will never develop hotspots, and goes from stove top to my air fryer/toaster oven. It browns without drying out the meat when done right. And can be soaked, or washed in the dish washer. Skip the foil pans, or wraps, use parchment paper. It does not burn, even in the air fryer. I have loved cooking, passionately, my whole life, and in my 80’s, i am still learning, and loving new things that make my life simple, but cooking is not worth doing when the food does not taste really good. Frozen raw shrimp, always in the freezer, a family pack pork chops or chicken thighs, cooked as one dish and frozen as individual meals, or wrapped and frozen as singles. Any way you do it, YOU control the fats or salt content. Want a sauce or poached fish or piece of chicken, i keep a bottle of drinkable wine in the refrigerator, just in case. My meds don’t allow drinking alcohol, but i cook using it whenever i like. The wine is drinkable, because my first Joy of Cooking informed me that if wine is not fit to drink, it is not fit to cook with either. All too true. So cook, but leave the foil in the store. Buy one small fully stainless steel clad aluminum pan, wherever, with a lid. Our grandchildren have to live with the mess we leave, so be kind to the environment, and to your taste buds.
