I thought giving that last one, cauliflower cheese spaghetti, a try. It's not as easy as it looks. Chopping, stirring and timing of it all is important. I thought I'd steam some spinach and make it florentine. Not only the flavor profile worked but also gave it a nice dark green color on top. So, sauce and spaghetti mixed, spinach over it then the mini croutons on top. Now the taste. The sauce is absolutely beautiful. BTW, instead of cheddar, I put some brie, dutch edam and parmesan reggiano. The sauce is so smooth and silky that I didn't want to put the spaghetti in. I decided to keep them separate and portion it. I want to down that sauce like soup or coffee, that's how good it is. That crouton with cauliflower greens is brilliant. It brings the whole dish together. You're right the green must go in tummy instead of the bin. But I have to say it's a rich food. A small portion will fill you up for the day.
