Leave your potatoes in the ground until the leaves of the plant turn brown. Also, add more soil to your bed. This will give your potatoes more depth to grow in. You can add soil as the plant grows. "Is all the extra work actually worth it?" I feel like it's a much deeper question than it seems on the surface. Modern conveniences have not done the thing they were supposed to do. They have not given us more free time. They've given us more time to spend working, at work, and thinking about work. Doing things the old fashioned and "harder" way force us to slow down and not be so go, go, go all the time. So, for my mental health, the extra work is VERY worth it.
