Great to see the full video up. From my not unlimited experience the effort to make a better burger can become an arms race, in which the toppings end up overwhelming the patty. That's not what happens here. It's properly aged, beefy and deep. And oh that bacon. With some burgers the bacon cracks and pulls as you bite in; this confit bacon has an extraordinary texture, so you bite straight through it. And there's one other point I made on the day which didn't make the cut: the whole burger is beautifully engineered. The patty is exactly the same size as the bun. Nothing is bulging out. The whole thing is complete. Top job; just intrigued to see how Will and Jack get all that work on to the menu as a burger that can be sent out by the dozen everyday. Finally, re the copy of my book on the table: it's called being COMPLETELY SHAMELESS. It's published tomorrow, and OBVIOUSLY I want as many people as possible to see it.
