I only found out last year that Teriyaki isnt actually the sauce itself(hence why teriyaki sauce can vary between restaurants) its the combination of Teri 照り which is "shine" and Yaki 焼きwhich is grill or broil. Thought that was really cool, one of my favourite meals to make for rice bowls with mince or chicken thigh or for on wraps or subs with salad on a hearty roll. It's also so cheap to make, and tastes so much better at home because you can tweak the recipe as needed. My go to is with Brown sugar, Soy, cooking Sake, Mirin, Garlic and a tiny bit of ginger.
