I’m old. In the past most Chinese food was rich and savory. Now the food is getting sweeter and sweeter so I can hardly eat it. I see a big change just in the last ten years.번역 보기

As second generation Chinese American and knows a few people in the industry, I would like to add that people severely underestimate the low prices on ingredients are for Americanized Chinese food. It's both good and bad. Good because it allows Chinese food to basically compete with fast food on prices. Rice and noodles much are cheaper than bread on a per-calorie basis. Dark meat chicken and non-belly pork are much cheaper than beef. Things like that. But this is also bad because as a result, you almost never see the high end stuff that Chinese eat when they are splurging at these restaurants. So Chinese food can't really compete on quality in the American market. And you really only see the highly priced restaurants in places of large Chinese populations, as most of the customers are Chinese.번역 보기

There's so many parallels with Chinese American and Italian American cuisine. I'd bet if you look at some of older restaurants they preserve dishes popular from the earlier days of Chinese immigration.번역 보기
