My maternal grandfather was a USA army cook during WW2. From his experience cooking, my mom grew up eating corn fritters and banana fritters. The corn fritters are made from Creamed Corn. The banana was cut in half vertically and horizontally to create four slices. It was then place in the batter and fried as a pancake. Serve both types of fritters with butter and syrup. I literally made both of these a month ago. My dad was out of town so my sister and I took turns staying with mom. I made corn fritters on the day our visits overlapped because they are my sisters' favorite. So comforting and delicious.번역 보기

With the creamed corn, there is a 1950s recipe of Jiffy spoon bread casserole . Jiffy is a brand of low cost muffin and cake mixes, the parent company is Chelsea Milling Company, been around since 1930. The recipe has variations with box of corn muffin mix, can of cream corn, sour cream, oil (or butter) and an egg. May add cheddar cheese and a can of corn. Soft, spoonable rich casserole of fluffy sweet cornbread. Very common dish in the midwest for Thanksgiving, Jiffy corn muffin mix is a smaller box size and cheap (50 cents is common around the holidays) .번역 보기
