Full written recipe - Dudhi Na Muthiya (Lauki Muthiya) Prep Time: 15–20 minutes Cooking Time: 25–30 minutes Serving: 4-5 people Ingredients: Lauki Muthiya Prep LAUKI | लौकी 1 MEDIUM SIZED / 600 GRAMS COARSE WHEAT FLOUR | दरदरा गेहूं का आटा 1 CUP JOWAR FLOUR | ज्वार का आटा 1/2 CUP BESAN | बेसन 1/4 CUP GINGER GREEN CHILLI PASTE | अदरक हरी मिर्च पेस्ट OF 4 GREEN CHILLI AND 4 INCH GINGER KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP TURMERIC POWDER | हल्दी पाउडर 1/2 TSP CUMIN POWDER | जीरा पाउडर 1/2 TSP CORIANDER POWDER | धनिया पाउडर 2 TSP GARAM MASALA | गरम मसाला 1/2 TSP SALT | नमक TO TASTE AJWAIN | अजवाइन A LARGE PINCH WHITE SESAME SEEDS | सफ़ेद तिल 1 TSP BAKING SODA | बेकिंग सोडा 1/4 TSP GROUNDNUT OIL | मूंगफली का तेल 3 TBSP LEMON JUICE | नींबू का रस OF 1/2 LEMON SUGAR | शक्कर 1 TBSP FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) GROUNDNUT OIL | मूंगफली का तेल AS REQUIRED (FOR GREASING) For Tempering GROUNDNUT OIL | मूंगफली का तेल 2 TBSP MUSTARD SEEDS | राई 1 TSP SESAME SEEDS | तिल 2 TSP CURRY LEAVES | कड़ी पत्ता A HANDFUL GREEN CHILLI | हरी मिर्च 3 NOS. (SLICED) HING | हींग 1/4 TSP LEMON JUICE | नींबू का रस OF 1/2 LEMON FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) Method: Start by checking the lauki, scratch it lightly with your nail, it should mark easily if it's good and fresh. Make sure that you get medium sized lauki, which is not extremely tender nor overripe. Peel the lauki well, then cut it into three portions and slice each one down the middle. Using a medium grater, grate the lauki, not too coarse. Grate the rest the same way. If you prefer a slightly different bite, a thicker hole grater works too. Take a bowl and squeeze the grated lauki in small portions to remove the moisture, transferring it into another bowl as you go. Don't discard this water, you can use it later to adjust the mixture if needed. Add the coarse wheat flour, jowar flour, and besan, along with the ginger green chilli paste to the squeezed lauki. Add all the powdered spices, salt, crushed ajwain, white sesame seeds, baking soda, groundnut oil, lemon juice, sugar, and fresh coriander. Mix everything together well and bring it into a dough. You'll see it all come together into a mixture that's soft but not sticky, this is exactly the consistency you want. Set up your steamer by adding water into, cover it and let it come to a boil. Grease the steaming tray well with groundnut oil, and grease your hands too. Take a portion of the mixture, about 130–140 grams, and shape it evenly, keeping the thickness consistent so it steams evenly all the way through. Shape the rest the same way. Place them in the steamer and let them steam for 20–25 minutes. After steaming for 20 minutes, uncover and check, you'll see the muthiya perfectly cooked and evenly puffed up. Insert a knife to check, it should come out clean with nothing sticking to it, and the muthiya shouldn't feel sticky to the touch either. Let them cool completely, then slice into medium-thick pieces with a sharp knife. If you don't want to give a tempering to the entire batch, then you can store the muthiyas in an airtight container inside the fridge, but make sure to use them within 3-4 days. Heat a fry pan on high flame and add groundnut oil, let it get hot. Once hot, add mustard seeds, sesame seeds, curry leaves, sliced green chillies, and hing, and let the tempering come together. Add the muthiya and mix well. Spread them out evenly and let them crisp up on one side over medium-low flame. You'll see one side turn beautifully crispy. Switch off the flame and finish with lemon juice and fresh coriander, mix well. You delicious Dudhi Na Muthiya are ready. Special Green Chutney Ingredients: FRESH CORIANDER | हरा धनिया 2 CUPS (PACKED) MINT | पुदीना 1/2 CUP GINGER | अदरक 1 INCH GREEN CHILLI | हरी मिर्च 3 NOS. GATHIYA | गाठिया 3 TBSP SUGAR | शक्कर 1 TBSP CUMIN SEEDS | जीरा 1 TSP LEMON JUICE | नींबू का रस OF 1/2 LEMON SALT | नमक TO TASTE WATER | पानी AS REQUIRED ICE CUBE | बर्फ 1–2 NOS. Method: By the time the muthiya steam, make the chutney. In a blending jar, add fresh coriander, mint, ginger, green chillies, gathiya, sugar, cumin seeds, lemon juice, salt, water, and ice cubes. Grind into a fine, thick chutney. Taste and check the seasoning. Our soft, spongy, crispy-edged Lauki Muthiya is ready, served with that fresh, tangy chutney on the side.번역 보기
