Start with the sheet batter. In a large bowl, add refined flour, cornflour, salt, and water. Whisk well until you get a smooth, lump-free batter. Set it aside to rest. Vegetable Prep Shred the cabbage finely. Trim the sides of the capsicum, separate the core, and slice it, keeping the skin side down as you cut. Trim the top and bottom of the carrot, peel it, then cut it into thin diagonal slices. Stack these slices and cut into fine juliennes. Halve the onion and slice it thinly in the same direction. Separate the spring onion whites and greens. Roughly cut the whites and cut the greens into 1-inch pieces. Finally, chop the ginger, garlic, and green chilli together in a chopper until fine. Noodles Bring water to a rolling boil in a pot and add the noodles. Keep the flame on only until the noodles separate out nicely, then switch off the flame, cover, and let them rehydrate in the hot water. After 3–4 minutes, uncover and check, they should be perfectly cooked. Strain them out and toss well so the steam escapes. You can rinse them under running water if you like. Add oil and mix well so the noodles don't stick to each other. Chowmein Heat a wok or kadhai on high flame and add oil. Once hot, add the chopped ginger, garlic, and green chilli, and sauté for 30 seconds. Add all the vegetables, onion, carrot, capsicum, and cabbage, and toss on high flame for 30 seconds. Add ketchup, red chilli sauce, dark soy sauce, vinegar, sugar, white pepper powder, and salt, and mix well. Add the noodles along with the spring onion whites and greens, and toss just until everything is evenly coated. Tongs make this much easier to manage. And our delicious, saucy and chatpata Desi Chowmein is ready. If you are making chowmein only for the spring roll then you can make half of the quantity that I have shared in this recipe, but I would recommend to make the full quantity as it will take the same amount of time and you can enjoy some Chowmein by itself too. Spring Roll Sheets Give the rested batter a good stir until smooth. Heat a nonstick pan until moderately hot, around 165°C, not too hot. Pour the batter in and spread it evenly into a thin sheet, pouring out any extra. Let it cook for 30–40 seconds, it will release on its own when ready. Transfer onto a plate or tray and dust with cornflour. Repeat with the rest of the batter. Trim off any excess edge with a pair of scissors. These are your instant spring roll sheets, soft and completely non-sticky. If you're not using them right away, cover with a damp cloth. Do not add the batter when the pan is extremely hot otherwise a net like texture will form and the sheets won’t cook properly. Assembly & Frying For the sealing slurry, mix refined flour and water into a thick slurry, this will work as glue. Take a spring roll sheet and place the chowmein filling on it, about 45–50 grams, positioned just below the centre. Apply the slurry to all the corners, then fold the sides in tightly so there's no air gap inside. Roll it up tightly and seal with a little more slurry on the sides. Shape the rest of the rolls the same way, you should get about 8–9 rolls. Heat oil to 160°C. Carefully add the spring rolls, 2–3 at a time, and don't stir for the first minute. Then fry on medium flame, turning gently, until light golden brown and crispy. Strain them out of the oil and transfer to a colander. Our crispy, golden Chowmein Spring Rolls are ready, cut them into bite sized pieces and serve them with a generous sprinkle of chaat masala and some schezwan sauce.번역 보기
