I love your budget challenge videos Emmy, they are always inspirational. A frugal suggestion for using eggs in baking: if you are really strapped for eggs, you can get away with using only 1 egg in a cake batter if you separate the yolk from the white. Whip the white until firm but not dry, and beat the yolk with 1 tablespoon of milk or water in a separate bowl. Add both back into the cake batter and mix thoroughly. That was taught to me by my grandmother who lived through the Great Depression. Also, to stretch the milk, many WWII cookbooks advised to dilute milk 50/50 with water in baking recipes.
